Cos - Vittoria, The Winery
Azienda Agricola COS was founded by Giambattista (Titta) Cilia, Giusto Occhipinti and Cirino (Rino) Strano, three friends who wanted to recreate the work of their ancestors.
In their quest to interpret the unique terroir of Vittoria, the estate decided to adopt the principles of biodynamic culture. This would help them find and maintain a harmonious balance with nature, as well as craft wines that are as representative as possible of their time and place.
Fascinated by ancient cellar practices, COS decided to work with amphoras, clay jars that were used by the ancient Greeks. The first shipment came from Spain in September 2000, and thus, Pithos was born and a new COS identity was created. The Pithos cuvée is fermented and aged solely in the amphoras which allow the grapes to express themselves naturally in their evolution towards becoming wine.
Cerasuolo di Vittoria
Cerasuolo di Vittoria is a red wine that is specific to the province of Ragusa, as well as parts of Caltanissetta and Catania. This ancient viticultural area dates back to the third century BC. The Cerasuolo di Vittoria began much later, however. In 1607, when the city of Vittoria was being established, the founder offered an acre of land to each settler that cultivated a vineyard. Thus began the passion. The Denomination of Origin was granted in 1974 and Guaranteed in 2005, making it the only D.O.C.G. in Sicily.
The Visit
Visit, with the winemaker, of the winery, the cellars, and the amphorae room with dozens of jars buried in the floor. It is impressive: the company use clay amphorae, a material that does not give any characteristic flavor and they produce also a wine fully fermented and aged in amphorae. But let’s let the owner himself tell us the whole story.
Have a tasting of 3 wines, including a DOCG, accompanied by bread, ragusano cheese, olives, baked ricotta and muffins.

The plateau of Victoria, a city of the Ragusa province closed between the rivers Ippari and Dirillo and slopes gently from the mountains to the Mediterranean Sea.
These lands, between 200 and 300 meters above sea level, have been historically cultivated in the vineyard before the birth of Vittoria in 1607. Today, there are still hundreds of " millstone" that have had their greatest economic splendor from the late eighteenth century to the 50s .
The geological characteristics, the hot climate, dry and well ventilated thanks to ocean currents and temperature changes between night and day, make this area unique and extraordinary. The wines have a particular elegance and minerality, never higher alcohol content and with a good acidity. The Frappato di Vittoria is the variety of reference which takes its name from the city of origin. Other typical variety are Nero d' Avola, Grosso Nero, Nerello Mascalese. As white grape Insolia, Grecanico, Albanello and Moscato.
