The challenge of the chef is to offer a true experience of the traditional Sicilian cuisine according to his point of view, by selecting products, meat, fish, homemade breads, etc., all at affordable prices.
He loves to revive all the typical recipes of the tradition: street food - rice balls with saffron, mozzarella and rocket; panini filled with tuna; panelle di ceci -chickpea fritters- - and main courses such as pork fillet in a chicory and pine-nut sauce, or amberjack in a tomato sauce with capers and oregano.
